Lemonade Wannabe

這一個調酒結合了漬檸檬的酸和Lillet Blanc (一種法國開胃酒)的花香與Hendrick’s琴酒的清爽. 另外來自檸檬皮與苦精的微微苦味以及氣泡酒的fizz, 非常消暑!

This drink combines the tangy lemon confit with the floral Lillet Blanc and the cucumberly Hendrick’s Gin. Subtle bitterness from the zest as well as bitters, with fizz from the sparkling wine, is perfect for a super hot summer day. 

準備/Prepare

  • 2顆黃檸檬/ 2 lemons 
  • 4小匙咖啡糖或紅糖/ 4 teaspoon coffee or brown sugar 
  • 1.5小匙海鹽/ 1.5 teaspoon sea salt 
  • 1.5份Hendrick’s 琴酒/ 1.5 part Hendrick’s Gin 
  • 1份Lillet Blanc/ 1 part Lillet Blanc
  • 1/2份梅酒/ 1/2 part plum wine 
  • 苦精/ Bitters 
  • 冰塊/ Ice 
  • 氣泡酒(不甜的) / Dry Sparkling Wine 
  • 1片羅勒葉或薄荷葉/ 1 Basil or mint leaf 

開始/Mix

  • 漬檸檬: sous-vide溫度調到82℃. 將一顆檸檬切片後撒上3茶匙的糖, 1茶匙的海鹽後以中等壓力密封, 煮60分鐘後放入冰箱冰鎮一晚.                                                                                                                                         Lemon Confit: set water bath to 82℃. Slice one lemon, sprinkle with 3 teaspoon sugar, 1 teaspoon sea salt, then vacuum pack on medium. Cook for 60 minutes then into the fridge overnight. 
  • 在玻璃杯(old-fashioned)中放入3片漬檸檬, 半顆的檸檬汁, 1茶匙糖以及一小搓的海鹽後用調酒杵搗約10下. 不要太大力以面過度壓出檸檬皮裡的苦味. 加入琴酒, Lillet Blanc, 梅酒, 冰塊後攪拌均勻. 倒入氣泡酒後加上數滴苦精, 以兩片檸檬以及羅勒/薄荷葉點綴.                                                                                                       In an old-fashioned glass, add 3 slices of lemon confit, juice of half a lemon, a teaspoon sugar and a tiny pinch of sea salt. Muddle lightly so not to over-extract the bitterness from the lemon skin. Then add gin, Lillet Blanc, plum wine and ice. Stir well, top with sparkling wine, few drops of bitters and garnish with 2 lemon slices and 1 basil/mint leaf.
